What do I do with all that cake? Sometimes I binge and end up eating more than half by myself over the night… but most often I share with friends! I’ve found that there is a lot of fun to be had in inviting a friend/s over, asking them to bring a few ingredients and then standing around a kitchen together concocting a scrumptious cake (maybe with a few cheeky drinks or a cup of tea, depending on the vibe). I’ve been vegan for a bit over a year now and have found that not only are vegan cakes just (if not more) delicious than non-vegan cakes, they are easier, quicker and cheaper to make. The simple formula for scrumptiousness upon which most vegan cake recipes are based is the Three-Two-One formula. Three parts flour; Two parts sugar; One part oil. Then there will be a few other things to add like a few tablespoons of cocoa and a teaspoon of vanilla essence if you’re making a chocolate cake. That’s it! And if you can manage to keep everything in the mixing bowl there is very little to clean up after.
